(5 litre pressure cooker)

Pressure Cooking Time 15 minutes
1 cup
lentils
4 oz (120 g)
ham
cut into ¼ inch (½ cm) cubes
1 medium (5 oz / 150 g)
onion
chopped
1 medium (4 oz / 120 g)
carrot
chopped
½ cup
celery
chopped
1 small
bay leaf
1 clove
garlic
finely chopped
½ tsp
salt
¾ cup
tomato juice
4 cups
water
1 tbsp
wine vinegar
Method

Recipe can be reduced to one-third by reducing all ingredients proportionately.

Put all ingredients except vinegar in cooker. Stir.

Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 15 minutes.

Remove cooker from heat. Allow to cool naturally.

Open cooker. Discard bay leaf. Mix half the soup lightly in a blender or mash it through a sieve.

Return blended soup to the remaining soup in cooker. Add vinegar. Stir. Reheat. Serve hot.
