Lentil Soup
(5 litre pressure cooker)

     Serves: 6  Pressure Cooking Time 15 minutes
 
1 cup lentils 
4 oz (120 g) ham cut into ¼ inch (½ cm) cubes
1 medium (5 oz / 150 g) onion chopped
1 medium (4 oz / 120 g) carrot chopped
½ cup celery chopped
1 small bay leaf 
1 clove garlic finely chopped
½ tsp salt 
¾ cup tomato juice 
4 cups water 
1 tbsp wine vinegar 

   Method
1 Recipe can be reduced to one-third by reducing all ingredients proportionately.
2 Put all ingredients except vinegar in cooker. Stir.
3 Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 15 minutes.
4 Remove cooker from heat. Allow to cool naturally.
5 Open cooker. Discard bay leaf. Mix half the soup lightly in a blender or mash it through a sieve.
6 Return blended soup to the remaining soup in cooker. Add vinegar. Stir. Reheat. Serve hot.
