Khichuri
Khichuri (Soft Rice with Green Gram and Vegetables)
(5 Litre pressure cooker)

split skinned green gram

Basmati rice

cauliflower
cut into chunky flowerettes
2 medium (200 g)
potatoes
peeled and cut into quarters

shelled or frozen

turmeric powder

coriander powder

red chilli powder

Method

Grind ginger and garlic into a paste.

Grind cardamoms, cinnamon and cloves into a paste adding a little water (1 tsp) from time to time.

In a pan, roast green gram on medium heat till golden brown (approximately 7 minutes), stirring constantly. Remove and wash gram.

Heat oil in cooker for about 5 minutes. Add bay leaves and cumin seeds. Stir for a few seconds. Add onion and fry till golden brown. Add ginger-garlic paste. Stir for a few seconds. Add gram and all other ingredients except water, spice paste and ghee. Mix. Add remaining water (8 cups). Stir.

Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 4 minutes.

Remove cooker from heat. Allow to cool naturally.

Open cooker. Add spice paste. Stir. Pour ghee evenly over khichuri. Serve hot.
