Khichuri (Soft Rice with Green Gram and Vegetables)
(5 Litre pressure cooker)

     Serves: 10  Pressure Cooking Time 4 minutes
 
20 g ginger 
10 flakes garlic 
6 green cardamoms peeled
2 sticks (2 ½ cm each) cinnamon 
4 cloves 
8 cups + 1 tsp water 
1 cup split skinned green gram 
½ cup mustard oil 
4 bay leaves 
2 tsp cumin seeds 
1 large (150 g) onion chopped
1 cup Basmati rice 
300 g cauliflower cut into chunky flowerettes
2 medium (200 g) potatoes peeled and cut into quarters
1 cup peas shelled or frozen
½ tsp turmeric powder 
2 tbsp coriander powder 
1 tbsp red chilli powder 
2 tsp sugar 
4 tsp salt 
2 tbsp ghee 

   Method
1 Grind ginger and garlic into a paste.
2 Grind cardamoms, cinnamon and cloves into a paste adding a little water (1 tsp) from time to time.
3 In a pan, roast green gram on medium heat till golden brown (approximately 7 minutes), stirring constantly. Remove and wash gram.
4 Heat oil in cooker for about 5 minutes. Add bay leaves and cumin seeds. Stir for a few seconds. Add onion and fry till golden brown. Add ginger-garlic paste. Stir for a few seconds. Add gram and all other ingredients except water, spice paste and ghee. Mix. Add remaining water (8 cups). Stir.
5 Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 4 minutes.
6 Remove cooker from heat. Allow to cool naturally.
7 Open cooker. Add spice paste. Stir. Pour ghee evenly over khichuri. Serve hot.
