| 1. | Heat oil in cooker for about 2 minutes. Add onions and chillies. Fry till onions are light brown. Add all other ingredients except those for tempering. Mix, pressing down spinach. | 
			| 2. | Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 6 minutes. | 
			| 3. | Remove cooker from heat. Allow to cool naturally. | 
			| 4. | Open cooker. Mash vegetables with back of a ladle till well blended. | 
			| 5. | For tempering, heat oil in a pan for about 2 minutes. Add garlic. Stir fry till golden brown and pour over sai bhaji. Stir. Serve hot. |
