Boiled Chicken
(5 Litre pressure cooker)

     Serves:  Pressure Cooking Time 10 minutes
 
¾ cup water 
3½ lb (1.6 kg) chicken pieces 
1 tsp salt 
1 stalk celery cut into 1½ inch (4 cm) pieces
1 medium (5 oz / 150 g) carrot cut into 1½ inch (4 cm) pieces
1 small (4 oz / 120 g) onion cut into quarters
12 peppercorns 

   Method
1 To cook reduced quantities : do not reduce water at all.
2 Pour water into cooker. Put grid in cooker. Place chicken on grid, putting in remaining ingredients among chicken pieces.
3 Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 10 minutes.
4 Remove cooker from heat. Allow to cool naturally.
5 Open cooker. Remove chicken. Discard vegetables and peppercorns.
6 This chicken can be used in salads, casseroles, soups, pies, etc. Allow the chicken to cool, pull it from the bones and shred, chop or dice as desired.
